Brunch with Potato Patties and Eggs
Ingredients:
  • 4 frozen hashbrown patties
  • 1 pkg. (0.9 oz.) Hollandaise sauce mix
  • 4 eggs
  • 2 tbsp. water
  • 2 tbsp. margarine or butter
  • 1 pkg. (3 oz.) cream cheese with chives, cubed
  • 4 tomato slices
  • 8 slices bacon, crisp-cooked

Directions:
  1. Prepare potato patties according to pkg. directions.
  2. Prepare Hollandaise sauce according to pkg. directions; keep warm.
  3. Beat together eggs and water.
  4. In large skillet, melt margarine over medium-high heat.
  5. Add egg mixture and cream cheese.
  6. Cook egg mixture until almost set. Stirring frequently.
  7. Remove from heat.
  8. To serve, place tomato slices onto each potato patty and top with 2 bacon slices.
  9. Divide egg mixture evenly onto patties. Spoon sauce on top.
  10. Garnish with fresh fruit if desired.
  11. Serve immediately. Makes 4 servings.
